This year's Super Bowl I've rewarded myself, and all else who dare, with a sweet and salty snack. Today's treat is chocolate and peanut-butter covered bacon. Here's the how-to of it:
10-12 strips Bacon
1/3 cup cream
1/2 cup bittersweet chocolate (60%+)
1/2 cup peanut butter
1) Cook some good quality bacon to your desired definition of "done." Semi-crispy works best because extra-crispy tends to break apart.
2) Warm up some peanut butter in the microwave, maybe a 1/2 cup or so. Scoop the peanut butter into a freezer-strength bag and cut a small hole in the corner. You'll use this to squeeze it onto the strips of bacon like toothpaste.
3) Using your finger, spread the peanut butter across the bacon so it coats the top side, but leave an edge of bacon around it. The chocolate will coat the edges later.
4) Take some of your favorite bittersweet chocolate (I used mostly 60% and added a little 86%) and break it into small pieces that will melt easily.
5) Scald some cream (use the same amount of cream as chocolate, by weight), then pour it over the chocolate.
6) Stir the cream and chocolate to melt (don't whisk).
7) Drizzle the melted chocolate mixture over the bacon until the top-side is coated evenly.
If you're into presentation, make another mixture using either white or extra dark chocolate and drizzle zig-zags across the bacon. My patience doesn't lend itself well to presentation, plus I had a 4-year-old helping, so the outcome, while delicious, wasn't too attractive.
There you go. Chocolate and peanut butter covered bacon. Brilliant! Don't worry if you screw it up, just eat the bacon straight.
